Executive Chef: David Ruiz
Inspired by summers at his grandmother's northern California farm, Executive Chef David Ruiz’s culinary foundation is anchored in the farm to table movement. A graduate of the California Culinary Academy, Chef Ruiz is an active proponent of and participant in food education and the connection between food and farming. He has worked in award winning restaurants in Aspen, San Jose, Yosemite and Albuquerque and considers the Bay Area’s Chef Scott Baumann and Albuquerque’s Boris Revilla valuable mentors at the intersection of culture, creativity, and consistency. Recognized for his technique, integrity, experience, and creativity, Chef Ruiz has been featured on Food Network’s Chopped (2016) and Guy Fieri’s Family Road Trip (2017). In 2018 he won the James Beard Foundation’s Blended Burger Competition with his approach to the sustainable burger.
Chef David has been at the helm of Scalo since April 2022 and since then he has transformed Scalo menu to a blend of classic Italian with modern American interpretation.
Owners: Kristie & Prashant Sawant
Kristie & Prashant took over Scalo in 2019, with the simple intention of bringing this iconic place back for the city of Albuquerque. Having degrees in Engineering they both worked in technology industry for over two decades. In the early 2010s they hung up the techy hats to pursue their passion in Travel, Food, Wine and Family. Having traveled extensively though Europe and, in particular Italy, their attempt is to bring that perspective to Scalo. Kristie is spearheading Scalo’s bar program and has curated an award-winning wine list with over 160 selections. Prashant is usually found in the back kitchen having fervent discussions with Chef about food and philosophy.
